Guest Samayal - Maanga(Raw Mango) Vadai



Maanga Venuma Maanga.....!!!! this has been the call I have been hearing for quite some time from the vegetable vendor who comes to my locality. Yeah.. its Mango season and why not we do stuff with Mangoes be it raw or fruit. So here I am gonna have few recipes with Mango. And the first one was given out by my Grandma. Paati samayal is here for you..


Ingredients:


Par-Boiled rice - 1 cup
Raw Mango pieces - 1 cup

Green chillies - 5

Thoor dhall - 2 tsp

Asafoetida(perungayam) - a pinch

Turmeric powder - a pinch

Salt - as per taste

Curry leaves

Method:

Soak rice and thoor dhall in hot water and grind along with all the other ingredients very finely. The batter has to be thick. Season the dough with mustard and curry leaves. Make small balls and press it in a chapathi press and make a hole in the center. For my convenience I used to press it on a wet cloth so that its easy to take it out. Finally fry it in oil and press along a tissue. Manga vadai is ready to eat.

The hot and sour taste makes it yummy. :)

Guest Samayal - Mango Rasam




Ingredients:

Mangoes (Chakara kutty) - 8
Thoor Dhall - 4 tbsp
Chilly powder - 1.5 tsp
Turmeric powder - pinch
Tamarind - Small lemon sized

Jaggery - for taste
Asafoetida(perungayam) - pinch
Salt - to taste
Curry leaves
Coriander leaves

Method:

Make slits in mangoes and let it boil in water for a while. Cook thoor dhall and add a pinch of turmeric powder, tamarind paste, jaggery, asafoetida, chilly powder, salt and curry leaves to it. Now add the mangoes along with the water to the
mixture. Allow it to boil for a while Now season it with mustard and garnish with coriander leaves. Mango rasam is ready to eat :)

These types of mangoes have a lot of fiber content in it. Once the mangoes get soaked well, it would give a lovely sweet and hot taste that no one can resist upon. :)

Serve it hot with steamed rice and chips. :) happy eating.

Guest Samayal - Cornflour Halwa



This is an easy sweet that can be prepared without prior planning. It tastes so yummy too.

Ingredients:


Cornflour - 1 1/2 cup
Milk - 1 1/2 cup
Water - 1 1/2 cup
Sugar - 1 1/4 cup
Ghee - 4 tbsp
Cashew - 1/4 cup broken to small pieces

Method:

Heat 1/2 tbsp of ghee in the frying pan, add broken cashews and fry till golden brown and remove and keep it aside. Now add milk, water and sugar to cornflour and mix every thing well.
Pour this cornflour mixture in the frying pan and stir continuously until it get thickens and color changes from pure white to transparent. Then add remaining ghee and cashew so that all blends well. Transfer them to greased plate immediately and once cooled can cut to desired shapes. It is ready to serve and even tastes good if chilled also.

Guest Samayal - Square Egg



Now what do I call this….Square Egg!!

Ok…lets see how to cook this….



Ingredients:



Egg - 1

Onion - 1

Curry leaves

Chilly powder - to taste

Salt - to taste



Method:



I am always fascinated by the way these English people in the ‘travel and living’ channel cook so intricately. as if they paint a monalisa. so good to watch them create a work of art. So that’s how even I try to look at my own cooking hehehe. I know its way too much..but still, I have tried to make this look and taste as good as possible.edho enaala mudinjadhu. :)



Finely chopped onions…it should be fine…that is when it tastes good.

Now put some oil, amount which u might know, on a pan. Non-stick I would suggest so that u use less oil and you can take the egg ‘square’ easily….apa thaan vecha paerkku mariyaadha…. ;)



And sauté the onion till it’s a little gold….not brown but little gold.

Put a ‘little’ salt and chilli powder and sauté…Put finely chopped coriander and curry leaves and sauté…. At the end of all this frying the onion should still be gold…not brown…so act accordingly ;)



ok…done frying?…sprinkle a pinch of ajino-moto on the top of the onions….

And arrange the fried lot, square and flat on the frying pan….

Break open the egg and put it on the top of the onions….make sure it doesn’t run off the square shape…count to ten and turn the egg over…now the onions you would see are a little brown, which is absolutely ok….so when u feel the egg on the bottom side (previously top ;) ) is cooked….take it off the pan and serve with curd rice…or rasam saadamm….

Or chummavae you can eat it…. :)

Guest Samayal - Paneer Butter Masala


Ingredients:

Paneer - 250 gms
Tomato paste - 1 tsp
Butter - 1 tbsp
Chilly powder - 1/4 tsp
Coriander powder - 1 tsp
Onion - 1/2
Garam Masala - 1/4 tsp
Ginger garlic paste - 1 tsp
Kastoori methi powder - 1/4 tsp
Tomato ketchup - 1 tsp
Milk - 1 cup
Salt - to taste


Method:

Take a bowl and add coriander powder, garam masala, kasthoori methi powder, tomato ketchup and chilly powder to it and dilute it with milk and mix it well. Now keep this aside.

Melt butter in a pan and add ginger garlic paste and mix it well until the raw smell changes. Add onions(finely chopped) to it and fry for a while. Now add the above mixture to the pan and mix well. Simmer the stove and keep it closed for 3-4 min for the contents to get cooked. Now add salt to it. If the gravy becomes thick, add some milk to it and mix quickly and dilute it. Put in some paneer to it and cook for few min. Panner butter masala is ready to eat. Decorate with fresh cream if needed. Serve hot with Kulcha or Nan.

Guest Samayal: Black Forest Cake

yummy home made black forest :)


Ingredients:


Maida-1 cup
Coco powder-4 spoon
Egg-2
Powdered sugar-3 cups
Chocolate essence-1spoon
Milk -1/2 cup
Chocolate-1 full bar
Fresh cream -2 cups
W
ater- 1 cup
Cherries-12
Butter - 1 spoon

Method:


Mix maida and coco powder evenly and keep it
aside. In another bowl beat eggs and add 2 cups of powdered sugar to it little by little and mix continuously. The softness of the cake depends on how evenly we mix it. In another bowl add milk, little pieces of chocolate bar and chocolate essence and mix it well. Now grease the baking container with butter. Now add all these mixed contents one by one and keep on mixing it well till u get a very smooth paste as it is shown in step1. Preheat oven at 180 degree Centigrade. Now bake the cake for 30 min. To check whether it is done, poke a knife into it and take out, it should not be sticky. Now take the baked cake out and cut it horizontally into two portions. Add 1/2 cup of sugar in water and mix it well till the sugar dissolves. Pour this water on top of both portions of the cake, this will soften the cake and give the sweetness. Blend the remaining sugar with the cream and keep it in refrigerator for 15 mins so that it becomes thick. Cut 6 cherries into small pieces. Apply the cream well on the one portion of the cake and add half of the cut cherries to it and grate some chocolate chips on it. Now put the second portion of the cake on top of it and apply cream and add the remaining chocolate and cherries to decorate it. Keep it in refrigerator and serve it cold. Enjoy the cake.
